Pulled Pork Taco Boats

Disclosure – The information and products in this post were provided by General Mills through Linqia.  However, all opinions and the recipe created are mine alone.  In fact I accidently had three of these Pulled Pork Taco Boats for dinner tonight (instead of just two) because I like them so much.

Publix grocery stores is bringing you a special Flavor Excursion Sales Event from 9/10-9/23.  This event will include two weeks of awesome coupons and recipes.  One week focusing on Italian themed goods and one on Mexican deliciousness.  In honor of this fabulous sale I wanted to put together some of the items that will be discounted for a quick and easy week night dinner.  Time for the #PublixFlavorExcursion. I picked up:
– a can of Ro*tel – with only the reddest, ripest tomatoes and the zestiest chilies make the final cut for absolute deliciousness. 
– an avocado (from Mexico) – slice it, dice it, smash it… that healthy fat we all dream of
– an Old El Paso Kit – perfect for tossing together quick, yet fabulous Mexican dinners
– shredded Kraft Cheese – which now comes in Jalapeno and Habanero to spice up your Mexican dishes
– a thing of shredded lettuce

Pulled Pork Taco Boats - A quick and delicious weeknight dinner.

Ingredients
  1. - Old El Paso Soft Taco Boats Kit
  2. - shredded lettuce
  3. - one can Ro*tel
  4. - cooked pulled pork
  5. - Kraft shredded Jalapeno cheese
  6. - one avocado (optional)
Instructions
  1. - warm taco boats and pork
  2. - layer lettuce and Ro*tel in the bottom of the warmed shells
  3. - cover with a layer of pulled pork
  4. - sprinkle with cheese
  5. - add a swirl of taco sauce (from Old El Paso kit)
  6. *add chopped avocado if desired

    These look so yummy Abby. I actually have the Rotel and avocados and cheese in my house and this is something Tom would love. I just need to cook up some pulled pork and make this meal.

    Oh those look so good! I dont use pork that much, as I do not have that many recipes. My family loves the taco type meals…I have to give those a try! YUM! I would love to make their Baked Quesadilla recipe!
