I just turned my calendar and realized that tomorrow is August. How is that possible? I feel like my 5 weeks of summer vacation have flown by. I cannot believe I am back to school next Friday, August 8th. Now don’t get me wrong, I love my students and am very grateful for my job, but I was so sure 5 weeks off would feel like an eternity and it is gone in the blink of an eye. I guess cramming a CA vacation and a family staycation in there helped it speed by.
Check out Brown Bag Sandwiches & Wraps Ease the Back-to-School Blues by BackatSquare0 at Foodie.com
The truth is that I have a bit of the back-to-school blues. Waking up early to drive to work instead of to run. No mid-day nap time allowed. Plus no more cooking yummy lunches at home. Ugghhhh… Just like some of my students I bring my lunch to work every day. It is cheaper and healthier than cafeteria food, plus it lets me have just what I want. Well, last year I fell into quite a rut and ended up bringing the exact same sandwich every day – turkey and reduced fat pepperjack cheese with spicy mustard. So this year to help myself ease back into school, and look forward to the lunch I pack, I am going to try and switch it up an bit with some new sandwiches and wraps. I love that I can buy the ingredients (gluten free bread and wraps for me of course) and do some prep work for these the weekend before. Then, what cannot be done that far in advance I can do the night before while I pack up my lunch. It’ll make it easier for me to make it out of the house and to school on time knowing that I have a delicious lunch already packed. Now if I could just stop dragging my feet. Time to buy school supplies and maybe even a new lunch bag.
Which sandwich/wrap in my collection do you think looks best?
Do you brown bag it to work?
