Ever since going gluten free I have really missed wraps. I always ordered them when I went to lunch with friends and they were my bar food of choice every Sunday while watching football. I tried lots of different gluten free tortillas, but didn’t find anything I could stomach. Many I took one bite of and tossed because they were so disgusting, which is really frustrating considering how expensive gluten free tortillas are.
Luckily Udi’s was kind enough to send me some tortillas to try out. Udi’s is my favorite GF brand (I use their bread every day for my work lunches) so I was very excited to try them! I had looked, but never been able to find their tortillas at a store near me.
The Udi’s wraps were the first gluten free tortillas I was actually able to eat! I didn’t take one bite, toss it, get mad, and throw the whole pack out (this has happened multiple times), instead I started to imagine all the things I could do with gluten free tortillas I actually enjoy. Needless to say, I am very excited. So while thoughts of tacos and quesadillas danced in my head, I will save those for a later date, I had to go straight to a delicious, simple, wrap because I miss those the most.
The Bacon, Lettuce, Tomato, and Avocado (BLT&A) Wrap –
This is a fabulous wrap because it only uses 5 ingredients which means it is super quick and very simple to make. Plus, by adding in avocado, in the form of guacamole, you are upping the BLT game with a heart healthy fat. To make it even better for you, sub in some turkey bacon instead of the norm. This wrap is a speedy, healthy, gluten free meal you can enjoy eating.
BLT&A Wrap Ingredients:
– Udi’s large gluten free tortillas
– guacamole (the avocado)
– bacon (I personally choose low sodium turkey bacon)
BLT&A Wrap Directions:
– spread guacamole over tortilla
– layer on lettuce and tomato
– add cooked bacon on top
– wrap, eat, and enjoy
