Since this was my very first big holiday gluten free I was a bit worried about how I would make it through. Luckily, I found tons of substitutions that made this Thanksgiving as fabulous as all the rest. I was happy I was still able to enjoy everything without having to sacrifice any of my favorite foods.
I knew my family would have some snacks or appetizers, we love cheeses and dips, so I came packing my new favorite cracker. Blue Diamond Nut Thins are delicious and not just good for a GF cracker – they are great compared to any cracker. Warning – stay away from the Pepper Jack Cheese variety which I believe come in single serving sized boxes (whoops!).
My favorite Thanksgiving food – not turkey, or green beans, or cranberries – it is Southern Style Macaroni and Cheese, probably because I only let myself make it once or twice a year. I was really worried about not getting any so I made a separate batch with Barilla Gluten Free noodles. I was shocked by how well they turned out. I was expecting a big taste difference, but these were really close to the original, so close that even my dad said next time there was no need to make two separate pans because I could just do one big GF batch for everyone.
After dinner we always decorate gingerbread cookies. To me this signifies the end of Thanksgiving and the start of the holiday season. I picked up these cookies and wasn’t sure how they would be. So far many of the GF breads, tortillas, bagels, etc. I have tried have been dry and flaky. I am happy to report these cookies surpassed my expectations. They were moist and delicious and allowed me to still participate in the cookie decorating, and eating. (However, they may not have been as cool as dino man’s Stegosaurs cookie. Isn’t he the cutest?!?)
