In the summer my three favorite things are fresh fruit, frozen yogurt, and the grill. This snack/dessert idea brings my love for all three together in one delicious concoction.
Grilled Peaches Directions: (serves 2)
– Turn grill on to low and allow it to warm up.
– Cut peach into fourths, removing pit.
– Microwave butter and then stir in the brown sugar.
– Brush brown sugar/butter mixture over each peach piece.
– Grill on low.
– Beginning with skin side down grill for 3-5 minutes
– Then rotate and grill for 2-3 minutes on both fleshy sides.
(I grill mine for the lower amount as I like them to be a bit firmer.)
Remove from grill and let cool as they will be very warm. If you are impatient and want to eat them right away I have been know to stick them in the freezer for a minute or two to cool them down. Ssssshhhhhhh…. Place two peach pieces in each bowl and then add a half cup scoop of vanilla frozen yogurt. I choose the Greek frozen yogurt because the protein helps me to stay full longer, but you could use pretty much any type and flavor of frozen yogurt that you wanted.
For half (2 pieces) of a delicious, grilled, brown sugar and butter coated, peach along with a half cup of Greek frozen yogurt it is only 167 calories. If you decide to eat the whole peach with your half cup of frozen yogurt it up it to 233 calories, but is twice as amazing. This is a wonderfully quick, easy, and delicious summer treat that will work perfectly for a snack or a dessert and will be a new cookout favorite.
