As a FitFluential Ambassador, Designer Whey sent me the protein powder used in this recipe to try and review. All thoughts on the awesomeness of this recipe are mine, and my sweet tooth’s, alone.
Last week I really focused on adding more protein to my diet. I always feel like I am hungry which cause me to eat portions that are way too big, or to binge eat junk. By adding a lot more protein through a crud ton of Chobani and all the delicious Designer Whey products I was sent (be sure to check back for a full review on all the Designer Whey goodies tomorrow) I actually ate really well and was 2,300 calories down for the week – that is almost a pound! Then, the Designer Whey bars ran out and I needed something to tide me over while I order more protein bars, so I stopped by Target since I needed some other stuff there too. I found a few different options there, but wasn’t super impressed. They were expensive and not what I was looking for… then an idea hit. I could totally make something with low calories and the 4 grams of protein these have on my own for way cheaper.
Someday I hope to be all creative in my kitchen like the fabulous Ms. Cotter and her Healthy Bites (I just ordered more, so excited), but until then I stick to what I know. Don’t get me wrong, I can follow a recipe like nobody’s business and whip up some delicious made from scratch baked goods, but currently I am all about quick, easy, cheap, delicious, yet healthier foods so that I am not spending all my time cooking and can unwind and relax a bit. I decided to go to an old fall back – boxed cake mix with applesauce instead of oil as it has treated me very well in the past – evident by my fabulous Skinny Pumpkin Spice Muffins and Skinny Chocolate Covered Banana Muffins.
Strawberries & Cream Protein Muffin Ingredients:
– 1 box Duncan Hines Strawberry Supreme cake mix
– 4 scoops Designer Whey Vanilla Protein Powder (high protein, low calorie)
– 2 cups unsweetened applesauce
– 6 Tbsp. white chocolate chips (optional, may be removed to lower calorie count)
Strawberries & Cream Protein Muffin Directions:
– preheat oven to 350
– mix dry cake mix and protein powder
– add 2 cups of applesauce and stir well
– fold in white chocolate chips (optional)
– use muffin cups or spray pan with nonstick spray
– scoop batter into muffin tins – it should make 20 full sized muffins
– cook 20 minutes or until toothpick inserted into center of muffin comes out clean
Only 4 ingredients means these bad boys are super quick, very easy, and pretty darn cheap to make. On top of that they have 4 grams of protein just like the store bought Special K bars. Plus time to be real – Would you rather have a granola bar or cake? That’s what I thought.
If you make the recipe as directed each muffin has exactly 159 calories, but if you leave the white chocolate chips out they ring in at 138 calories each. Either way you can have your cake muffin and eat it too. (I’ve never understood that saying by the way. I know its origin, but still – If I have cake… EAT IT ALL!)
I am planning on using these as an after dinner treat since I still crave desserts most nights. This way I can have a low calorie dessert, and the added protein will help keep me full so I am not tempted to have any late night snacks. Do you ever cook with protein powders at home?
