With summer upon us – May in SC signals the opening of water parks, pools, and everyone cooking out – I can’t seem to go outside without smelling some delicious grilling coming from somewhere in my neighborhood. There is nothing that screams summer to me like a juicy burger off the grill. However, a big ol’ cheeseburger may not always be the best option for me as I am trying to eat healthier (and lose a bit of weight), but I hate to be the girl who brings her own chicken breast to the party (because they cook up differently than burgers and I don’t want to be a pain). Enter my Buffalo Chicken Burgers with Blue Cheese. These babies can easily be thrown on the grill with the other burgers, but won’t leave you feeling guilty.
Buffalo Chicken Burgers w/Blue Cheese Ingredients:
– 1 lb. (16oz.) extra lean ground chicken breast
– 2 oz. crumbled blue cheese
– 2 Tbsp. buffalo wing sauce
*buns, lettuce, & tomatoes to dress burgers
Pour ground chicken, blue cheese, and wing sauce into a large bowl. Mix together until the wing sauce is coating all the meat and the cheese has been spread throughout. (The easiest way to do this is to use your hands.) Split mixture into 4 equal sized balls and smoosh into patties. Grill as you would a traditional burger.
These burgers have a great buffalo flavor and you can taste the blue cheese in every bite. Smack it on a hamburger bun and serve it with some lettuce and tomato and you have a great right off the grill meal. This recipe makes 4 quarter pound burgers (cheeseburgers actually with all that yummy blue cheese) and each Buffalo Chicken Burger patty rings in at only 182 calories. Quick, easy to make, delicious, and you know exactly how many calories you’re getting – I call that a grilling victory!
