I will admit this is not quite as healthy as some breakfasts I could make. However, it is a reduced calorie version which makes it a bit healthier, plus it is super easy, can be prepared ahead, and is delicious. If you are like me and you love weekend workouts this Baked French Toast is for you. Spend 15 minutes preping it Saturday or Sunday morning before you head out for the gym, spin class, yoga, your long run, whatever. Then when you get home throw it in the oven while you shower off and Ta-Da amazing, delicious, filling brunch.
Baked French Toast Ingredients:
- 12 slices whole wheat bread (I used the 45 calorie Sara Lee)
- 3/4 cup brown sugar
- 6 Tbsp. butter (I used Land o’Lakes Light)
- 4 eggs
- 1 and 1/2 cups fat free milk
- 1 tsp. vanilla
- cinnamon (for sprinkling – optional)
Baked French Toast Directions:
- Melt 6 Tbsp. butter
- Mix 3/4 cup brown sugar into melted butter
- Pour brown sugar/butter mixture on the bottom of a 9X13 glass pan
- Beat 4 eggs, 1 and 1/2 cups fat free milk, and 1 tsp. vanilla together in medium bowl
- Place one layer, 6 pieces, of bread in pan on top of brown sugar/butter mixture
- Spoon half of egg mixture on top of bread
- Optional: sprinkle with cinnamon
- Place second layer of bread, six pieces, on top of first layer
- Cover with remaining egg mixture
- Optional: sprinkle with cinnamon
- Let Baked French Toast rest (and soak up all the goodness) in the fridge while you go for a workout, run, shopping, etc. FYI- This can also be made the night before and let sit in the refrigerator until the next morning.
- Preheat over to 350
- Cover Baked French Toast with foil and bake for 30 minutes (Look plenty of time for you to go shower and get cleaned up post workout. Seriously, perfect weekend dish!)
- Remove foil and bake an additional 15 minutes (45 minutes total baking time)
- Let cool, eat, and enjoy!
I absolutely love this dish because it only takes 15 minutes of prep time on Saturday or Sunday morning and then I can toss it in the fridge and forget about it while I go for my long run. Then when I come back I can throw it in the oven while I am getting cleaned up and BAM! – Delicious Baked French Toast. This breakfast is so simple, yet so good I could lick the pan (seriously). It is the perfect post long run meal. You really don’t even need syrup it is so yummy, but if you love syrup like I do feel free to splurge a bit. I serve it with just a squirt of the Aunt Jemima Sugar Free syrup (it has very few calories).
The pan is meant to be 6 servings, with each serving being two pieces of Baked French Toast (the pieces are stacked on top of each other and have now been deliciously molded together by egg, cinnamon, brown sugar, and butter- HEAVEN) and each two piece serving comes in right at 300 calories. Not bad for an outstanding, decadent breakfast. I suggest serving it with fresh berries.
