Every Sunday I enjoy featuring a recipe for busy people, because I know there are tons of us out there, who don’t have much time to cook, but still want to eat delicious reduced calorie foods. This is my little way of proving that all those old excuses-
“I don’t have time.”
”I can’t cook.”
They just don’t cut it. You have time for these super simple recipes and they are so easy everyone can make them.
With the holiday season coming up and tons of parties, work gatherings, pitch-ins, etc. my recipes this week and next week are healthy appetizers you can take to share and not feel guilty about eating!
Skinny Pimento Cheese:
2 cups reduced fat (2%) shredded cheddar cheese
1/2 cup (4 oz.) plain Greek yogurt non-fat (0%)
1/4 cup (4 tbsp.) low fat mayo
*Be careful – they have regular, light, and low fat mayo and the low fat has the least calories by far. Always check labels when buying ingredients.
1/2 cup (4 oz.) diced pimentos
*1 tbsp. jalapeños – optional for spicier pimento cheese
This really is a 5 minute recipe start to finish-
– Pour all the ingredients into a large mixing bowl.
– Stir until mixed evenly.
* Do not continue stirring forever. You want this to have a chunky, cheesy consistency.
– Serve with reduced fat crackers (I love it with Triscuits) or a sliced baguette.
Now the fabulous stats:
This recipe makes about 3 cups.
I split it into 1/4 cup (4 tbsp) serving sizes which makes it about 12 servings total.
This provides a serving twice a large as most store bought hummus, dips, etc. (because I cannot stop eating it) for only 73 calories!
If you split it into 2 tbsp. servings like most store bought items do it would have below 40 calories a serving.
Seriously how amazing is that?
