So I got tons of great reviews back on my Skinny Pumpkin Spice Muffins and was so pleased that you all loved them. However, I heard some concerns too. “I made them once, loved them, now I look for spice cake everywhere and cannot find it. Ahhhhhh….” I got you covered you’ll be able to find all the ingredients to this very easily. I also heard, “Um,you forgot the chocolate:)” So here it is for ya’ll a skinny chocolate muffin recipe.Skinny Chocolate Covered Banana Muffins:
Box chocolate cake mix (I used Devil’s Food because it sounded sinfully delicious.)
3 large ripe bananas
1/2 cup unsweetened applesauce (store brand)– Preheat oven to 350
– Smash the bananas together until they are mostly smooth with only a few chunks
– Mix together all three ingredients
– Place into 18 muffin cups
– Bake for 20 minutes
– Let cool and enjoy
I must admit I was a bit worried as the consistency of the muffin batter was much different than when I made the Skinny Pumpkin Spice Muffins; however, when I pulled them out of the oven they looked great. I tried one right away (you know quality control) and loved them. Maybe I love them a bit too much- the two I had for breakfast this morning accidently turned into three. This is another fabulous, quick, delicious recipe that is low calorie. Only 109 calories per muffin, shut the front door! This proves that you can be super busy, like I know so many of us are, and still have time to cook delicious, yet healthier food options.
