This is one of my favorite fall/winter recipes because it is so quick to make, yet very tasty. I find I make this a ton on football Sundays when I am super busy and craving unhealthy food (like buffalo wings and dips), but still want to try and eat healthy. This is so fast you can literally throw it all together during a commercial and not have to miss any of the game. Plus, I am on a budget, as I know many of you busy bees are, and the fact that I got all the ingredients for $10 is amazing.
A super quick, low calorie, delicious dinner all for only $10, WOW! Have I sold you yet? Speedy Buffalo Chicken Soup
1 can (12.5oz.) Premium Chunk White Chicken (I used Tyson.)
2 cans (10.75oz. each or 21.5oz. total) Campbell’s Cream of Potato Soup
1 and 1/2 half cups (12oz.) fat free milk
1/4 cup (4 Tbsp.) Frank’s Red Hot Buffalo Wing sauce (whatever buffalo sauce you have works fine too)
*Here’s were it gets tricky easy –
– Dump all ingredients into pot.
– Warm to desired temperature.
– Eat and enjoy. (You can add more buffalo sauce to taste if you want an even stronger buffalo flavor.)
The recipe makes almost 6 cups. The 156 calories per serving is for a 1 cup serving just like soups you would by at the store. As you can tell this is comparable to most creamy soups you would pick up. In honesty though, I am a good eater, so I always have 2 cups. Even for a big 2 cup bowl I am happy to report it is only 312 calories. Woohoo! (Plan on serving six small 1 cup bowls, three big 2 cup bowls, or having leftovers.)

Obviously I love food. This weekend my best friend and I went to the Mac Off. A competition where 20 local restaurants vie for the title of best macaroni and cheese. A small taste test from each place is a dollar and then you decide the winner by vote.
Gorgeous fall day + ridiculous sunset over the water + delicious macaroni and cheese (my favorite cheat food) = HEAVEN!
