Then you have no excuse to eat junk. Start every day off right with this healthy breakfast.
You can make enough for an entire week with just 5 minutes of prep time.
This poor man’s busy woman’s version of the quiche is so remarkably simple and yet surprisingly healthy and tasty. This is my favorite breakfast to preplan/premake because there are a million different variations you can create depending on what you like and how much time you have.
Buy your favorite veggies (peppers, onions, broccoli, tomatoes, etc.)
Pick up eggs, or egg beaters in my case (how many eggs depends on how much you want to make)
*Optional – buy thinly sliced ham or Canadian bacon & your favorite shredded cheesePreheat oven to 375.
While the oven is preheating chop up whichever veggies you choose. I went with peppers and onions.
No time to chop? Too busy? Buy fresh pico de gallo at the store. It has tomato, onion, and cilantro all chopped up and ready too go. Plus it is delicious. Spray muffin tins.
If you choose to use ham or Canadian bacon line each tin with one piece first. If not skip this step and go straight on to the eggs.
Then, add your eggs into the tins. If you are using fresh eggs scramble them up first.
Next, drop the veggies into the tins. (You may also add shredded cheese if you choose.)
Bake the Crustless Quiches for 18-22 minutes.
Remove from the pan, let cool, and then refrigerate for a weeks worth of meals.
I like to microwave mine and then smoosh it between a 100 calorie whole wheat English muffin with a bit of hot sauce for a delicious breakfast sandwich. See how quick that can be! You can really just pour in eggbeaters and prebought pico if you don’t have enough time to chop your own veggies and in less than 5 minutes you can have breakfast for a week. Be busy, but still eat healthy.
