You all know I have been on a pumpkin kick lately, but these babies are a constant in my life every fall (and winter). They only have 3 ingredients and are super easy to make. I know they may not be all super fancy like these coconut flour, quinoa, agave things I keep pinning, but they are proof that even if you are super busy you can still make healthy treats.
Skinny Pumpkin Spice Muffins:
Box Spice Cake Mix (Dunkin Hines)
15oz. Can 100% Pumpkin (Libby’s)
1/2 cup unsweetened applesauce (store brand)
– Preheat oven to 350
– Mix together
– Place into 18 muffin cups
– Bake 18 minutes (make take up to 22)
*That is it! Seriously easiest, yummiest, recipe!
The kicker: each muffin only has about 124 calories and 2 grams of fat.
Amazing for someone like me who is counting calories.
This proves that even if you are ridiculously busy and don’t have time to cook from scratch you can still make healthy substitutions and find better alternatives.
